Monday- 10 miles (8:20 pace)
Tuesday- off
Wednesday- 5 miles with 4x1/2 mile intervals (3:30, 3:25, 3:29, 3:30)
Thursday -4 easy miles (9:05 pace)
Friday-1450 swim followed by 10 min hard on the stationary bike followed by 0.75 mile run at 7 min pace on the treadmill. Then weights/abs circuit
Saturday- 7 miles (8:40 pace)
Sunday- 23.5 mile bike ride (17.5 mph)
Soooo swimming is just not getting easier. I had high hopes of doing a workout, but I was swimming is a warm cloudy gym pool that had only two lanes and just felt nauseated. I tried to do 300, 200, 100 main set, and that turned in to 200, 100, 100. My 200 was 2:33 which made me feel a little better. So I ended up just scratching the rest of the swim and did a semi tri/brick. And then you know because what else was I to do in the gym, might as well lift and do my abs. I did way to many lunges and squats and my legs were sore Saturday and Sunday.
Sunday bike ride was much better, the best I've felt on the bike since starting back riding again. The weather was great. I rode in my aerobars a bit and pushed a little in the bid ring. 6 weeks until race day.

Happy Easter
We had a nice Easter weekend with grandma and grandpa coming to visit. There was some good food eaten, a date night, fun Easter gifts (new rain boots for T, which she wont stop wearing), and a Easter egg hunt in our neighborhood (through our yard). I dressed them up which I don't ever do. But trying to take pictures of them both together just doesn't quite work yet!

Tuesday- 5 miles easy run (9:20 pace)
Wednesday- 50 min bike on the trainer with 4x3 min hard efforts with 3 min easy spin inbetween
Thursday-5.25 miles hard (8:08 pace)
Friday- 2000 yard swim (4x150yds main set on the 2:15)
Saturday-4 miles easy plus weights/abs circuit
Sunday-17 mile bike ride in 20mph winds
Few notes-swimming still hurts, and is not fun. Sundays bike ride was RIDICULOUS. The wind was absolutely crazy and those 17 miles were one of the hardest I've ever done. I'm missing running everyday. :)

Pedicures
P got her first pedicure the other day. Really the reason is because I needed to get one done and the day just worked out that it was easier to just bring her with me. She picked out bright pink polish with sparkles to go on top (naturally). She thought it was lots of fun getting her toes painted.
And then just because most days are much more "normal", on this particular day it was PJ day at school and then she choose to wear rain boots with it and do her own hair.

Picture Day
I'm not the best at remembering picture day at school. But I did (kind of) a couple weeks ago. And by that I mean, I put my kids in dresses for school that day. Since I have had professional photos done and I like the outdoor pictures so much better, I just don't care all that much for the standard school pictures with their 70's props.

What Have I done...
I signed up for a triathlon. The last triathlon I did was in 2007. Granted this one is super short, 300yd swim, 10 mile bike and 2.5 mile run. My goal is sub 1 hour. Last year the winning time was 1 hour, 2 years ago the winning time was 55 min. Because you know that I am just too damn competitive.
I had to go purchase a swim suit because I didn't have one to train in and dug out my cap and goggles out of the attic. (Ha!) Plan is to swim once a week until race day. I've swam twice so far, 1900yds and then 2000yds. Second workout was a bit easier but still not wonderful. I did manage to do 6x100's on the 1:30 completing them in the 1:12-1:16 range. Oh dear, my arms are not that strong anymore!
I've ridden the bike a few times as well. Goal right now is 2x per week until classes finish up. Once outside on the weekend and 1 ride on the trainer during the week. My butt is getting adjusted but I do think I want to go try out some different saddles this summer.

Piper asked to go for a ride while I ran yesterday...we did 1 mile together!

Happy Birthday T!
Tatum turned 2 last weekend and we had a very low key birthday party at our house with just kids over and some playing and eating cupcakes.
Stats: 24 lbs- 19th% (this is a huge improvement)
34.25inches-71st% (also a big jump).
She is growing great. Just starting to fit into 24month clothes. Likes to copy exactly what big sister is doing. Starting to use the potty (kind of started doing this at school). Loves blankets and stuffed animals. She is talking really well now, in terms of the amount of words she has and she is fairly understandable. She has had lots of skin issues with the eczema and folliculitus. They come and go and flare up at different times. I'm hoping now that its turning into summer, the more humid air will help with her skin. To me she is quite funny but also extremely impatient. Lots of throwing things at the table (food, forks, ect). Along with not wanting to share anything she has with P. Good times. She loves the swings and has learned how to lean back to get the swing going. Happy 2nd birthday T!

Cooking GF
I've been trying new recipes lately to try and mix things up. I came across a GF food bloggger, Gluten Free on a Shoestring. Before being diagnosed with Celiac's my favorite cake was funfetti cake with funfetti icing. Just so happens she had a recipe for Funfetti Cupcakes which I made. These were super yummy! I really liked these a lot.
Then I tried out her Olive Garden breadsticks, and they did not turn out as good. To be fair, the recipe called for instant yeast, and I did not have it, so this could be why my breadsticks did not rise like hers did. Maybe I will try again sometime!
I have also tried a fair amount of dinner recipes too. I tend to use Pinterest for this. I pin recipes I see and then each week when we do our menu planning if we are in the mood to try something new, I pull this up and look whats on there. I've made a few various recipes:
1. Lemon Garlic Shrimp with Wilted Spinach over Cauliflower Mash-This was awesome! I loved this recipe. I did add bacon to the wilted spinach and a little bit of butter when sauteing, but we really liked this one!
2. Chickpea Curry- This was quick and pretty yummy. We kind of doubled the recipe in terms of the amount of chickpeas and veggies but did not double the sauce. We thought the taste was pretty good but thought it was just too much chickpeas. I think we would do this again but add tofu/chicken instead of the second can of chickpeas.
3. Grilled Salmon over broccoli/edemame rice-This was quick and really good too! Really easy to make and throw together. I have a quinoa-rice blend and I made this instead of just rice. The salmon had great flavor with this sauce but it could be a little too much sugar for some people.
